Choose a subject that interests you; find a paper about this subject that also publishes the data used in the paper. Critique this paper on both graphics and methodology used. Develop your own analysis to support/contradict the hypothesis of this paper. Put all of this into a write-up that explains everything you did in R as well as your conclusions from your work.
